One & Done® Butter Chicken

I'm not a huge fan of baked chicken as I love my food grilled, but I have to admit, this is really delicious!  It isn't the healthiest recipe, but totally worth it!  We are using our very well known saltine cracker recipe for the crumbs.  Everything is super easy to make.

INGREDIENTS:

  • 2 eggs, beaten
  • 1-2 cups of crushed One & Done Saltine Crackers (recipe)
  • 3-4 skinless, boneless chicken breast halves
  • 1/2 cup cold butter stick, sliced very thin

DIRECTIONS:

    Preheat oven to 350 degrees

    Place eggs and crushed One & Done saltine crackers (recipe) in two separate bowls.  Dip chicken in the eggs, then dip in the cracker crumbs until all sides are coated.

    Place in a 9 x 13 in baking dish.  Place the butter pieces all around the chicken and a few on top. Bake for 20-40 minutes until it reaches an internal temperature of 165.
