Fried Onion Rings & Pickles

INGREDIENTS:
- 1 cup flour (plus extra in a side bowl for pre-dipping)
- 1/2 tsp baking powder
- 3 tsp One & Done
- 2 eggs
- 1/2 cup buttermilk
- 1/2 cup club soda
- Vegetable oil for cooking
- Makes enough batter for about 2 onions.
If you love fried onion rings or pickles, this recipe is so worth the extra calories. They are light, crispy and you won't have an upset stomach if you eat too many.
DIRECTIONS:
Preheat your skillet (or deep fryer) with cooking oil to about 350 degrees. If you don't have a deep fryer, make sure you use a meat thermometer to measure the oil temp.
Mix the dry ingredients together in one bowl and the liquids in another. Then combine everything and mix well.
Dip your onions or pickles in a bowl of just plain flour. It may be helpful to do them in batches and use a bowl with a lid. Lightly dust them off and dip them into your batter. Shake off the excess and add them to the fryer. Fry for about a minute or two and flip until it's an even golden brown.
